Any stereo other than binaural is surely an electronic creation. The recorder makes a decision about what each ear should hear and records accrodingly.
What is the closest to real life, electronically created stereo or mono?
For a bit of fun listen here to a stereo remake of the 1910 record, Casey Jones. You should be able to work out how it was done.

I remember those 'heads'. I guess the nearest this got to portability was the creation of 'stereo microphones', but even those weren't actually 'binaural' – well, unless you are a small rodent of course.

Lordy. Remember all those 1970s 'stereo' albums that just sounded like someone had left a bad reverb on? I think the only time they sounded ok was if you sat right in the middle of the image. Dare move a centimetre to the left or right and it was gone!
But the BBC used dummy human heads with the microphones fitted in the ears.
My father used to be very proud of his Edmundo Ros: Strings latino Phase 4 stereo .
He felt that he was at the leading edge of technology with his Hacker record player and extension speaker. It's Phase 4 he used to tell his friends.
Nobody ever seemed to know exactly what "Phase 4" meant but it sounded good!
It came into my mind today that Christopher England used to be slightly obsessed with a record called "Little Birdie".
I never heard it before and have never heard anyone play it again since.
